The Story

How a Pandemic Side Project Became Unregular Pizza

Unregular Pizza is a Roman-style, fast-casual pizzeria by the slice in Union Square, NYC, founded by Rome-born Gabriele Lamonaca along with master pizzaiolo Salvatore Gagliardo. The idea was born during the 2020 COVID lockdown, when Lamonaca — whose pre-pandemic plans to open a Roman pizzeria had been derailed — started experimenting with pizza at home and posting it on Instagram, then began giving slices away in exchange for homemade goods or services, inspired by his grandmother's wartime bartering stories. That barter community grew until he and Gagliardo opened a physical shop in 2021, using imported Italian flour and a 72-hour fermented dough, with the name "Unregular" (a deliberate misspelling of "irregular") chosen to set the brand apart from cheap, low-quality NY slices. The pizzeria is best known for its "Burrapizza" (topped with whole burrata) and still runs its signature barter program today.
