The Story

A Greenpoint slice shop from the Paulie Gee's family.

Paul Giannone spent decades as an IT guy in corporate New Jersey — a self-described geek who wasn't suited for the job. Pizza was the thing he actually loved, the thing he built a wood-fired oven in his backyard for and hosted tastings around on weekends. At 56, he walked away from the corporate world and opened Paulie Gee's in Greenpoint in 2010. It became one of the most respected names in New York pizza — not because he grew up in the business, but because he listened, studied, and built community around every pie.

Around the corner from the original, Paulie Gee's Slice Shop is the retro counterpart — a vintage, music-forward slice joint built for the neighborhood, not the tasting menu. Order up front, grab a slime-green stool, and dig into classic NY-style and square slices — including a standout upside-down Sicilian with a sesame-seed bottom. It's the shop Giannone opened specifically so Greenpoint could have a real slice-and-go spot without pulling business from his sit-down original. Traditional New York style, done by people who've been doing it since 2010.

The Story Behind the Menu

Giannone didn't dream up a new menu for the Slice Shop — he edited one down. The original Paulie Gee's was built on inventive topping combinations; the Slice Shop stripped things back to an old-school '60s New York slice joint.

The signatures weren't new. The Hellboy (pepperoni and Mike's Hot Honey) and the Freddy Prinze (upside-down Sicilian, sesame-seed bottom) were already favorites from the original, reformatted for slice-and-square service alongside pizza chef Andrew Brown. Even dessert kept it simple: just lemon and spumoni ices, the way it used to be done.
